I’m well aware that it’s basically summer and so not soup season anymore. But my coworker Gil shared this recipe with me a few weeks ago (when it was a little cooler out) and I finally decided to try it. Soooo put the AC on, and enjoy a bowl of this delicious creamy without cream cauli soup.
I am all about this insane riced cauliflower movement. Not so much about the mess it makes. I tried throwing a head of cauliflower into my blender a few years ago and it was a disaster. Rotating my lunch prep recipes ensures that I’ll never cave, toss my lunch in the garbage and go spend $20 at an overpriced health food spot in the city.
When I tell people I’m a vegetarian, everyone always asks me “how do you do it?” My response is simply, I don’t like meat. If I liked it, I would eat it in moderation but the bottom line is that I really just don’t like meat. However, when I did eat meat, there was one kind that I truly loved…and that was bacon.
